Cooking Pasta

Boil the Pasta
In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes.

Drain the Pasta
Once cooked, drain the pasta and set aside. Reserve 1/2 cup of the pasta water for later use.
Preparing Vegetables

Chop the Vegetables
While the pasta is cooking, wash and chop the bell peppers, zucchini, carrot, and halve the cherry tomatoes. Set aside.

Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Then, add the chopped vegetables and sauté for 5-7 minutes until they are tender but still crisp.

Add Spinach
Stir in the fresh spinach and cook for an additional 2 minutes until wilted.
Making the Sauce

Combine Sauce Ingredients
Pour in the vegetable broth and lemon juice to the vegetables in the skillet. Season with salt and black pepper. Stir and let it simmer for about 3-5 minutes.

Mix in Pasta
Add the cooked pasta to the skillet along with the reserved pasta water. Toss everything together to combine and heat through for 2-3 minutes.

Finish with Cheese
Remove from heat and stir in the grated Parmesan cheese until melted and incorporated.
Serving

Serve the Pasta Primavera
Plate the Pasta Primavera and serve immediately, garnished with extra Parmesan cheese if desired.
