Gnocchi

Butternut Squash Preparation

Bacon and Miso Sauce

Method

Gnocchi Preparation

  1. 1

    Boil and Mash Potatoes

In a large pot, bring salted water to a boil. Add whole potatoes and cook until tender, about 20-25 minutes. Drain and let cool slightly before peeling.

  2. 2

    Make Gnocchi Dough

Pass the potatoes through a potato ricer into a large bowl. Add flour, the egg, and salt. Mix until a soft dough forms. If the dough is too sticky, add a bit more flour.

  3. 3

    Shape Gnocchi

On a floured surface, divide the dough into sections. Roll each section into a log, about 3/4 inch thick. Cut into 1-inch pieces and shape with a fork to create ridges.

Butternut Squash Preparation

  1. 4

    Roast Butternut Squash

Preheat the oven to 400°F (200°C). In a bowl, toss the diced butternut squash with olive oil, 5-spice powder, salt, and black pepper. Spread on a baking sheet and roast for 25-30 minutes until tender and caramelized.

Bacon and Miso Sauce

  1. 5

    Cook Bacon

In a skillet over medium heat, cook the chopped Nueske's bacon until crispy. Remove and drain on paper towels, leaving the rendered fat in the skillet.

  2. 6

    Prepare Miso Sauce

In the same skillet, add water and miso paste, stirring until the miso is dissolved and the mixture is smooth. Add the crispy bacon back to the skillet and mix well.

Gnocchi Cooking

  1. 7

    Cook Gnocchi

Bring a large pot of salted water to a boil. Add the shaped gnocchi and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon.

  2. 8

    Combine Ingredients

In a large serving bowl, combine the cooked gnocchi, roasted butternut squash, and miso bacon sauce. Toss gently to combine.
