Preparation

    Prepare the Garlic Confit

    Preheat the oven to 300°F (150°C). Slice the top off the head of garlic to expose the cloves. Drizzle with olive oil and wrap in foil. Bake in the oven for about 45 minutes until soft and golden.

    Prepare the Hasselback Potatoes

    Preheat your oven to 425°F (220°C). Slice the potatoes thinly, making sure not to cut all the way through, about 1/4 inch apart. Brush with olive oil and sprinkle with salt. Roast in the oven for 45-50 minutes until crispy and tender.

    Prepare the Roulette Peppers

    Wash and slice the roulette peppers into strips. Set aside for grilling.

    Chop the Parsley

    Finely chop the parsley and set aside for garnish.

    Prepare the Cream

    In a saucepan, heat the heavy cream over medium-low heat. Season with salt and black pepper, and let simmer until slightly thickened, about 10-15 minutes.

    Cook the Flat Iron Steak

    Season the Niman Ranch flat iron steak with salt and black pepper. Heat a grill or skillet over high heat. Cook the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Remove from heat and let rest for 5 minutes.

    Grill the Roulette Peppers

    In the last few minutes of cooking the steak, add the sliced roulette peppers to the grill or skillet. Cook for about 2-3 minutes until tender and slightly charred.

Serving

    Plating the Dish

    Slice the flat iron steak against the grain and arrange it on a plate. Add the hasselback potatoes and grilled roulette peppers. Drizzle the garlic confit over the steak and pour the roulette cream on the side. Garnish with chopped parsley and serve with lime wedges on the side.
