For the Mushroom Cream

Preparing the Mushroom Cream

    Sauté Shallots and Garlic

    In a medium saucepan, melt the butter over medium heat. Add finely chopped shallots and minced garlic. Sauté until translucent, about 3-4 minutes.

    Add Mushrooms and Thyme

    Add chopped oyster and chestnut mushrooms to the pan. Sauté for another 5 minutes until the mushrooms are tender. Stir in fresh thyme.

    Add Cream and Season

    Pour in the heavy cream and bring to a gentle simmer. Season with salt and black pepper. Reduce heat and let simmer for 10 minutes until the cream thickens slightly.

Cooking the Monkfish and Vegetables

    Prepare Broccolini

    Blanch broccolini in boiling salted water for 2-3 minutes until bright green. Drain and set aside.

    Roast Oyster Mushrooms

    Slice remaining oyster mushrooms and spread them on a baking sheet. Drizzle with olive oil, salt, and pepper. Roast in a preheated oven at 200°C (400°F) for 15 minutes until golden.

    Cook Monkfish

    Season monkfish fillets with salt and pepper. In a hot skillet, sear the monkfish for 3-4 minutes on each side until golden and cooked through. Remove from heat and let rest.

    Toast Hazelnuts

    In a dry pan, toast hazelnuts over medium heat for about 5 minutes until fragrant. Chop coarsely.

Plating the Dish

    Assemble the Dish

    On each plate, spoon the mushroom cream as a base. Place the seared monkfish on top, arrange broccolini and roasted oyster mushrooms around the fish, and sprinkle chopped hazelnuts over the top.
