Duck Preparation

    Prepare the Duck

    Score the skin of the duck breasts in a crosshatch pattern without cutting into the meat. Season both sides with salt and black pepper.

    Cook the Duck

    In a skillet, heat duck fat or olive oil over medium heat. Place the duck breasts skin-side down and cook for about 6-8 minutes, allowing the skin to render and become crispy. Flip the breasts and cook for another 3-4 minutes until medium-rare. Remove from heat and let rest.

Sourdough Apple Dumpling

    Prepare the Apples

    Peel, core, and slice the Honeycrisp apples. Set aside.

    Assemble the Dumpling

    Preheat the oven to 375°F (190°C). Take a slice of sourdough bread, place a slice of apple in the center, and fold the bread around the apple, sealing it. Repeat with remaining slices.

    Bake the Dumplings

    In a baking dish, melt butter and mix with brown sugar, cinnamon, nutmeg, and water. Place the dumplings in the dish and pour the mixture over them. Bake for 25-30 minutes until golden brown.

Glazed Shallots

    Peel and halve the shallots. In a saucepan, combine shallots, honey, balsamic vinegar, and butter over medium heat.

    Glaze the Shallots

    Cook for about 10-15 minutes until the shallots are tender and the sauce thickens. Season with salt to taste.

Duck Jus

    Make the Duck Jus

    In a large pot, combine duck bones, chopped carrots, celery, onion, water, thyme, and bay leaf. Bring to a boil, then reduce heat and simmer for about 2 hours.

    Strain the Jus

    Strain the solids from the liquid to obtain a clear jus. Adjust seasoning if needed.

Ginger Garnish

    Prepare the Ginger

    Finely grate the fresh ginger and set aside for garnish.
