Prepare the Dry Ingredients
In a large mixing bowl, combine the sweet rice flour, brown sugar, ground ginger, ground cinnamon, ground nutmeg, baking powder, and a pinch of salt. Whisk together until well blended.

Mix Wet Ingredients
In a separate bowl, mix the water with the dry ingredients until smooth and free of lumps.

Steam the Mixture
Prepare a steamer or a pot with a steaming rack. Pour the mochi mixture into a greased heatproof dish or pan that fits into the steamer. Cover it with a clean kitchen towel or foil to prevent condensation from dripping onto the mochi. Place it in the steamer and steam for about 25-30 minutes until firm and cooked through.

Cool and Cut the Mochi
Once cooked, remove the dish from the steamer and let it cool for about 10 minutes. Dust a clean countertop with cornstarch and transfer the mochi onto the surface. Dust the top of the mochi with more cornstarch to prevent sticking. Use a sharp knife or pizza cutter to cut the mochi into squares or desired shapes.
