    Prepare the Mixture

    In a large mixing bowl, combine the crab meat, fresh breadcrumbs, mayonnaise, Dijon mustard, egg, green onions, Old Bay seasoning, salt, and black pepper. Gently mix until all ingredients are well incorporated, being careful not to break up the crab meat too much.

    Form the Cakes

    Using your hands, form the mixture into patties about 2-3 inches in diameter and 1 inch thick. Place the formed cakes on a plate or baking sheet and refrigerate for at least 30 minutes to help them firm up.

    Cook the Cakes

    Heat the vegetable oil in a large skillet over medium heat. Once hot, add the crab cakes in batches, ensuring not to overcrowd the skillet. Cook for about 4-5 minutes on each side or until golden brown and crispy. Remove from the skillet and place on a paper towel-lined plate to drain excess oil.
