    Prepare the Calamari

    In a mixing bowl, combine the flour, cornstarch, salt, black pepper, and cayenne pepper. Mix well.

    Coat the Calamari

    Dip the sliced calamari into the beaten eggs, allowing excess to drip off, then dredge them in the flour mixture until fully coated.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Calamari

    Fry the coated calamari in batches for about 2-3 minutes or until golden brown. Use a slotted spoon to transfer the fried calamari to a paper towel-lined plate to drain excess oil.

For the Marinara Sauce

    Sauté the Garlic

    In a saucepan over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for 1-2 minutes until fragrant.

    Prepare the Sauce

    Add the crushed tomatoes, oregano, salt, black pepper, and sugar to the saucepan. Stir well to combine.

    Simmer the Sauce

    Bring the sauce to a simmer, then reduce the heat to low and let it cook for about 15-20 minutes, stirring occasionally.

    Finish with Basil

    Just before serving, stir in the chopped fresh basil into the sauce.
