Braised Pork Shoulder

    Season the Pork

    Rub the pork shoulder with salt and black pepper evenly on all sides.

    Sear the Pork

    In a large Dutch oven, heat olive oil over medium-high heat. Once hot, add the pork shoulder and sear on all sides until golden brown, about 4-5 minutes per side.

    Sauté Aromatics

    Remove the pork from the pot and set aside. In the same pot, add diced onion and minced garlic, sauté until onions are translucent, about 4 minutes.

    Add Broth and Herbs

    Return the pork shoulder to the pot. Add chicken broth, bay leaves, and fresh thyme. Bring to a simmer.

    Braise

    Cover the pot and transfer to a preheated oven at 300°F (150°C). Braise for about 3 hours until the pork is tender and easily pulled apart with a fork.

Spiced Summer Beans

    Combine Ingredients

    In a medium bowl, combine mixed summer beans, cumin, paprika, lemon juice, and fresh parsley. Mix well.

    Serve the spiced summer beans alongside the braised pork shoulder.

Braised Chickpeas

    Sauté Chickpeas

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

    Add Chickpeas and Cook

    Add drained chickpeas, cumin, salt, and water to the skillet. Cook for about 10-15 minutes until heated through and flavors meld.

    Serve

    Serve the braised chickpeas as a side dish with the pork.

Pickled Sweet Peppers

    Prepare Brine

    In a saucepan, combine white vinegar, sugar, salt, and water. Bring to a boil over medium heat, stirring until sugar dissolves.

    Pickle Peppers

    Place sliced sweet peppers in a jar. Pour the hot brine over the peppers. Let it cool to room temperature, then refrigerate for at least 1 hour before serving.

Tomato Jam

    Cook Tomatoes

    In a saucepan, add chopped tomatoes, sugar, lemon juice, and salt. Bring to a boil over medium-high heat.

    Simmer

    Reduce heat to low and simmer for about 30-40 minutes, stirring occasionally, until the mixture thickens to a jam-like consistency.

    Cool and Store

    Allow the tomato jam to cool before transferring to a jar. Store in the refrigerator until ready to use.
