Preparing the Cider

    Wash and Prepare Apples

    Thoroughly wash the Honeycrisp apples under cold running water. Core and slice the apples into quarters.

    Combine Ingredients

    In a large pot, combine the sliced apples, filtered water, sugar, lemon juice, cinnamon stick, and nutmeg. Stir well to mix the ingredients.

    Cook the Mixture

    Bring the mixture to a boil over medium-high heat. Once boiling, reduce heat to a simmer and cover the pot. Allow the mixture to simmer for about 30 minutes until the apples are soft.

    Mash the Apples

    Once the apples are soft, use a potato masher to mash the apples into a pulp. This will help release more juice into the cider.

    Strain the Mixture

    Place a fine mesh strainer or cheesecloth over a large bowl. Pour the apple mixture into the strainer, allowing the juice to collect in the bowl. Discard the solids or use them for compost.

Flavoring the Cider

    Add Flavoring Ingredients

    To the collected apple juice, add the vanilla extract, cardamom pods, and cloves. Stir well to combine.

    Simmer for Flavor

    Return the flavored cider to the pot and heat over low heat for an additional 10-15 minutes to allow the flavors to meld together.

    Cool and Serve

    Once the cider is flavored, remove from heat and allow it to cool. Serve warm or chilled, garnished with additional cinnamon sticks or apple slices if desired.
