Method
Preparing the Blistered Shishitos

Preheat the skillet
Heat a large skillet over medium-high heat until hot.

Prepare the shishitos
In a large bowl, toss the shishito peppers with olive oil and sea salt until evenly coated.

Cook the shishitos
Add the shishito peppers to the hot skillet and cook for about 8-10 minutes, stirring occasionally, until the peppers are blistered and charred on all sides.

Remove from heat
Once cooked, remove the skillet from heat and set aside.
Making the Shishito Aioli

Combine ingredients
In a medium bowl, mix together the mayonnaise, minced garlic, lemon juice, olive oil, and sea salt until smooth and well-combined.

Taste and adjust
Taste the aioli and adjust seasoning if necessary. Add more lemon juice or salt to taste.
Plating and Serving

Arrange the shishitos
Place the blistered shishitos on a serving platter.

Serve with the shishito aioli on the side for dipping.
