Cook the Bacon
In a separate pan, cook the cherrywood smoked bacon until crispy. Drain on paper towels and set aside.

Form and Cook the Burgers
Form the ground beef into two patties, season with salt and black pepper. Grill or pan-fry over medium-high heat for about 4-5 minutes per side, or until cooked to your desired doneness. During the last minute of cooking, add a slice of aged white cheddar on each patty to melt.

Prepare the Bacon Aioli
In a small bowl, mix mayonnaise, garlic powder, lemon juice, and crumbled cooked bacon. Adjust seasoning as needed.

Assemble the Burger
Toast the brioche buns lightly. Spread the bacon aioli on the bottom bun, add lettuce, burger patty with melted cheese, caramelized onions, tomato slices, dill pickle chips, and top with the other half of the bun.

Serve
Serve the Coastal Burger with house fries, pasta salad, or a fruit medley on the side.
