    Prepare the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Slowly whisk in 1 cup of grits and reduce heat to low. Cook for about 20-25 minutes, stirring occasionally, until thickened. Add salt to taste.

    Make Grit Cakes

    Once the grits are cooked, spread them into a greased 9x9 inch baking dish and let cool until set. Cut into squares or rounds. In a skillet, heat 2 tablespoons of olive oil and fry the grit cakes until golden brown on both sides. Set aside.

    Sauté the Vegetables

    In the same skillet, add 2 tablespoons of butter and sauté chopped bell peppers and onions until soft, about 5 minutes. Season with salt and pepper.

    Cook the Shrimp

    In a bowl, toss shrimp with Cajun seasoning. In the skillet, add remaining butter and cook the shrimp over medium-high heat for about 3-4 minutes on each side, until they are pink and cooked through.

    Prepare the Cajun Cream Sauce

    In a small saucepan, add the heavy cream and bring to a simmer. Reduce heat and let simmer until slightly thickened, about 5 minutes. Season with salt and pepper.

    Assemble the Dish

    On a plate, place a grit cake, top with sautéed bell peppers and onions, and then add the blackened shrimp. Drizzle with Cajun cream sauce and serve immediately.
