Prepare the Crust
Preheat the oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted butter, and 1/4 cup of sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and let it cool.

Make the Cheesecake Filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Add the remaining 1/2 cup of sugar and mix until well combined. Mix in the sour cream, key lime juice, and key lime zest until creamy. Add the eggs one at a time, mixing well after each addition.

Bake the Cheesecake
Pour the cheesecake filling over the prepared crust. Bake in the preheated oven for 50-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool slowly.

Chill the Cheesecake
Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, cover and refrigerate for at least 4 hours, or overnight for best results.

Serve the Cheesecake
Before serving, top the cheesecake with toasted coconut flakes and diced mango. Drizzle with caramel sauce. Slice and enjoy!
