Prepare the Biscuits
Preheat your oven to 450°F (232°C). In a large bowl, mix the flour, baking powder, baking soda, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the buttermilk until just combined. Turn the dough onto a floured surface and gently knead it a few times. Roll out to 1-inch thickness and cut into rounds. Place on a baking sheet and bake for 12-15 minutes until golden.

Poach the Eggs
Fill a pot with water and add the vinegar. Bring to a gentle simmer. Crack the eggs into small bowls. Create a gentle whirlpool in the water and carefully slide the eggs in, cooking for about 3-4 minutes until the whites are set but the yolks are still runny. Remove with a slotted spoon.

Form the pork sausage into patties. In a skillet over medium heat, cook the patties until browned and cooked through, about 4-5 minutes per side.
