Preparation
Prepare the Chicken
Preheat the oven to 375°F (190°C). Slice a pocket into the chicken breast and stuff it with Boursin-herb cheese. Season the outside of the chicken with olive oil, salt, and pepper.
Cook the Chicken
Place the stuffed chicken in a baking dish and bake for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
Prepare the Gnocchi
In a large skillet, heat olive oil over medium heat. Add diced onion and bell pepper, and sauté for 3-4 minutes until softened.
Simmer with Spices
Add diced tomatoes, coconut milk, curry powder, cumin, garam masala, salt, and pepper. Stir to combine, then add the butternut squash gnocchi. Simmer for 10-12 minutes until the gnocchi is cooked and the sauce thickens.
Serve
Plate the butternut gnocchi mixture and top with the baked stuffed chicken. Enjoy!
