    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips to form fries.

    Soak the Fries

    Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a large pot, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Drain and dry the fries thoroughly. Fry them in batches until golden brown and crispy, about 4-5 minutes per batch. Remove and drain on paper towels.

    Season the Fries

    While the fries are still hot, drizzle with truffle oil and toss in the minced garlic, chopped parsley, and salt.

    Serve

    Top with grated Parmesan cheese and serve immediately.
