    Prepare the crust

    Preheat your oven to 325°F (163°C). In a bowl, mix the graham cracker crumbs and melted butter until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove and let cool.

    Make the cheesecake filling

    In a large mixing bowl, beat the cream cheese and granulated sugar together until smooth. Add the sour cream, vanilla extract, and lime juice, mixing until combined. Add the eggs one at a time, mixing gently after each addition.

    Add strawberry puree

    Fold in the pureed strawberries into the cheesecake mixture until evenly combined, then pour over the crust in the springform pan.

    Bake the cheesecake

    Bake the cheesecake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly. Remove from oven and allow to cool at room temperature for about an hour.

    Chill the cheesecake

    Refrigerate the cheesecake for at least 4 hours or overnight to set completely.

    Once chilled, remove the cheesecake from the springform pan. Drizzle strawberry sauce over the top and garnish with fresh strawberries before serving.
