Cooking Instructions

  1. 1

    Prepare the Asparagus and Peppers

Preheat the grill on medium-high heat. Toss the asparagus and sweet bell peppers in 2 tablespoons of olive oil, and season with salt and black pepper.

  2. 2

    Grill the Vegetables

Grill the asparagus for about 5-7 minutes, turning occasionally, until tender and slightly charred. Grill the sweet bell peppers for about 4-5 minutes, until charred on all sides. Remove from the grill and set aside.

  3. 3

Prepare the Lemon Garlic Cream Sauce

In a saucepan over medium heat, melt the butter with the remaining tablespoon of olive oil. Add the minced garlic and sauté until fragrant (about 1 minute). Stir in the heavy cream and lemon juice, and simmer for 5 minutes. Season with salt and pepper to taste, then remove from heat.

  4. 4

    Sear the Scallops

Pat the diver scallops dry with paper towels and season with salt and black pepper. Heat a skillet over high heat and add a tablespoon of olive oil. Once hot, add the scallops and sear for 2-3 minutes on each side until golden brown and cooked through.

  5. 5

    Plating

On a plate, arrange the grilled asparagus and charred sweet peppers. Place the seared scallops on top and drizzle with the lemon garlic cream sauce. Serve immediately.
