    Sauté the Base

    In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are soft.

    Add Aromatics

    Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Incorporate Tomatoes and Broth

    Stir in the canned diced tomatoes and fish stock (or seafood broth). Bring the mixture to a simmer.

    Add Seafood

    Once simmering, add the shrimp and mussels. Cook for about 5-7 minutes, or until the shrimp is pink and the mussels have opened.

    Finish with Cream

    Stir in the heavy cream and let the chowder simmer for another 2-3 minutes. Season with salt and black pepper to taste.

    Garnish and Serve

    Remove from heat, stir in the fresh parsley, and serve hot.
