    Prepare the Mushrooms

    Preheat your oven to 375°F (190°C). Gently clean the mushrooms with a damp cloth and remove the stems. Set the caps aside and finely chop the stems.

    Sauté the Onions

    In a skillet over medium heat, add olive oil. Sauté the chopped onion until translucent, about 5 minutes. Add the chopped mushroom stems and cook for an additional 3-4 minutes.

    Mix the Filling

    In a bowl, combine the sautéed onion and mushroom mixture, chopped lobster meat, mascarpone cheese, fresh tarragon, salt, and black pepper. Mix well to combine all ingredients.

    Stuff the Mushrooms

    Fill each mushroom cap generously with the lobster mixture. Top each stuffed mushroom with breadcrumbs to give a crispy texture.

    Bake

    Place the stuffed mushrooms on a baking sheet and drizzle with a little olive oil. Bake in the preheated oven for 15-20 minutes or until the mushrooms are tender and the tops are golden brown.
