Cook the Pasta
In a large pot of boiling salted water, cook the conchiglie pasta according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce
In a saucepan over medium heat, melt the butter. Stir in the flour and cook for about 2 minutes, stirring continuously until golden. Gradually whisk in the milk, and continue to stir until the mixture thickens. Add the shredded white cheddar cheese, salt, and black pepper, and stir until the cheese is melted and the sauce is smooth.

Combine Pasta and Sauce
In a large bowl, combine the cooked pasta, cheese sauce, and chopped lobster meat. Mix until the pasta is evenly coated.

Prepare the Breadcrumbs
In a separate bowl, mix the breadcrumbs with a tablespoon of melted butter and tarragon (optional).

Bake
Preheat your oven to 350°F (175°C). Transfer the pasta and lobster mixture into a greased baking dish. Top with the tarragon breadcrumbs. Bake for about 20-25 minutes, or until the top is golden and crispy.

Remove from the oven and let it cool for a few minutes. Serve warm and enjoy your Classic Lobster Macaroni!
