    Prepare the Beef Tips

    In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Season the beef tips with salt and black pepper. Add the beef tips to the skillet and sear on all sides until browned, about 5-7 minutes. Remove from skillet and set aside.

    Cook the Vegetables

    In the same skillet, add the remaining tablespoon of olive oil and the butter. Once melted, add the minced garlic and shallots. Sauté for 2-3 minutes until fragrant. Add the sliced mushrooms and cook for another 5 minutes until they are browned and tender.

    Make the Demi-Glace

    Pour in the red wine and scrape the bottom of the skillet to deglaze. Allow the wine to reduce by half, about 3-4 minutes. Then add the beef broth and thyme. Bring to a simmer.

    Combine and Finish Cooking

    Return the beef tips to the skillet. Reduce the heat to low and let simmer for another 10-15 minutes, or until the beef is tender and the sauce has thickened. Adjust seasoning with salt and pepper as needed.

    Serve

    Serve the beef tips warm, drizzled with the red wine demi-glace and garnished with fresh thyme if desired.
