    Prepare the Mussels

    Rinse the mussels under cold water, scrubbing the shells to remove any dirt. Remove any beards from the mussels and discard any that are open or damaged.

    Sauté Aromatics

    In a large pot, melt the butter over medium heat. Add the chopped shallot and minced garlic, sautéing until softened and fragrant, about 2-3 minutes.

    Add Beer and Seasonings

    Pour in the amber ale and stir in the whole grain mustard and fresh thyme. Bring the mixture to a gentle simmer.

    Steam the Mussels

    Add the cleaned mussels to the pot, making sure they are evenly distributed. Cover the pot with a lid and steam for about 5-7 minutes, or until the mussels have opened.

    Finish and Serve

    Once cooked, discard any mussels that did not open. Season to taste with salt and black pepper. Serve immediately with crusty bread, if desired.
