    Cooking the Filet Mignon

    Preheat a skillet over medium-high heat. Rub the filet mignon with olive oil, salt, and pepper. Once the skillet is hot, sear the steaks for 4-5 minutes on each side for medium-rare. Remove from heat and let rest.

Potato Gratin

    Preparing the Gratin

    Preheat the oven to 350°F (175°C). In a greased baking dish, layer the sliced potatoes. In a bowl, mix heavy cream, garlic, salt, pepper, thyme, and half of the Gruyere cheese. Pour over the potatoes and top with remaining cheese. Bake for 45-50 minutes until golden and bubbly.

Haricot Verts

    Blanch the haricot verts in boiling salted water for 3-4 minutes until tender-crisp. Drain and immediately plunge into ice water. In a skillet, melt butter and add the beans, sautéing for 2-3 minutes. Drizzle with lemon juice and season with salt and pepper.

Mushroom Ragout

    In a skillet, melt butter over medium heat. Add shallots and garlic, cooking until soft. Add the mushrooms and thyme, sautéing until mushrooms are golden brown. Season with salt and pepper to taste.
