    Prepare the Dry Rub

    In a small bowl, mix together paprika, brown sugar, garlic powder, onion powder, cayenne pepper, salt, and black pepper to create the dry rub.

    Season the Pork Chops

    Rub the pork chops with olive oil and then generously apply the dry rub on both sides. Let them marinate for at least 30 minutes.

    Grill the Pork Chops

    Preheat the grill to medium-high heat. Grill the seasoned pork chops for about 6-7 minutes on each side or until they reach an internal temperature of 145°F (63°C).

    Prepare the Succotash

    While the pork chops are grilling, heat a skillet over medium heat. Add the onion and bell pepper, sauté for 3-4 minutes until softened. Then add the corn and zucchini, cooking for another 5 minutes. Stir in the cilantro and lime juice, and season with salt and pepper to taste.

    Serve

    Once the pork chops are done, let them rest for a few minutes before serving. Plate the grilled pork chop alongside the corn succotash.
