Custard Preparation

Prepare Foie Gras

Cut the foie gras into small pieces and allow it to come to room temperature for about 30 minutes.

Melt White Chocolate

In a small saucepan, melt the white chocolate over low heat, stirring constantly until smooth. Remove from heat and let cool slightly.

Blend Ingredients

In a blender, combine the foie gras, heavy cream, eggs, melted white chocolate, salt, and ground white pepper. Blend until completely smooth.

Prepare Baking Dish

Preheat the oven to 150°C (300°F). Pour the custard mixture into individual ramekins and place them in a baking dish. Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins.

Bake Custard

Bake in the preheated oven for 30-35 minutes, or until the edges are set but the centers are still slightly jiggly. Remove from the oven and let cool.

Chill

Once cool, refrigerate the custards for at least 2 hours or until set.
