Preparation and Cooking
Marinate the Pork
In a bowl, combine soy sauce, hoisin sauce, honey, five-spice powder, garlic, ginger, and red food coloring. Place the pork belly in a resealable bag, pour the marinade over it, and refrigerate for at least 4 hours or overnight for best results.
Roast the Pork
Preheat the oven to 180°C (350°F). Remove pork from the marinade (reserve the marinade) and place it on a roasting rack in a baking dish. Roast for about 1.5 hours, basting with reserved marinade every 30 minutes, until the pork is caramelized and cooked through.
Prepare the Cashew Sauce
In a blender, combine 1 cup of roasted cashews, 1/2 cup of water, 1 tbsp of soy sauce, and 1 tsp of lime juice. Blend until smooth and creamy. Adjust seasoning to taste.
Serve
Slice the char siu pork belly and serve it with crab and pea dumplings, Thai basil, and drizzle with the fried rice cashew sauce.
