Cooking the Pasta

    Boil the Water

    In a large pot, bring salted water to a boil over high heat.

    Cook the Spaghetti

    Add the spaghetti to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

    Reserve Pasta Water

    Before draining, reserve about 1 cup of the pasta cooking water. Then drain the spaghetti in a colander.

Preparing the Sauce

    Cook the Pancetta

    In a large skillet over medium heat, add the pancetta. Cook until crispy, about 4-5 minutes. Remove from heat.

    Whisk the Eggs and Cheese

    In a bowl, whisk together the eggs and grated Parmesan cheese until well combined. Set aside.

    Combine Ingredients

    Add the drained spaghetti to the skillet with pancetta. Toss to combine, allowing the heat to warm the pasta.

    Add Egg Mixture

    Remove the skillet from heat and pour the egg and cheese mixture over the spaghetti, quickly tossing to coat the pasta. The residual heat will cook the eggs without scrambling them.

    Adjust Consistency

    If the sauce is too thick, gradually add reserved pasta water, a little at a time, until the desired creaminess is achieved.

    Season

    Season with freshly ground black pepper to taste.
