Sorbetto

Method

Sorbetto

  1. 1

    Prepare the Berry Mixture

In a blender, combine the mixed berries, sugar, lemon juice, and water. Blend until smooth.

  2. 2

    Strain the Mixture (Optional)

If you prefer a smoother sorbet, strain the mixture through a fine mesh sieve to remove seeds and pulp.

  3. 3

    Freeze the Sorbet

Pour the mixture into a shallow dish and place it in the freezer. Stir every 30 minutes for about 3 hours until it is frozen and fluffy.

Cardamom Lady Fingers

  1. 4

    Preheat the Oven

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. 5

    Prepare the Batter

In a mixing bowl, whisk the egg whites until soft peaks form. Gradually add the granulated sugar, continuing to whisk until stiff peaks form.

  3. 6

    Add Dry Ingredients

Gently fold in the all-purpose flour, cardamom powder, vanilla extract, and a pinch of salt until just combined.

  4. 7

    Pipe the Lady Fingers

Transfer the batter to a piping bag and pipe 3-inch long strips onto the prepared baking sheet, leaving space between each.

  5. 8

    Bake

Bake in the preheated oven for 10-12 minutes or until lightly golden. Allow to cool completely.

Serve

  1. 9

    Assemble the Dish

Scoop the mixed berry sorbetto into bowls and serve with sliced stone fruits and cardamom lady fingers on the side.
