Focaccia

Prepare the Dough
In a large mixing bowl, combine warm water and yeast. Let it sit for about 5 minutes until foamy.

Mix Ingredients
Add flour, olive oil, salt, and chopped rosemary to the yeast mixture. Mix until a sticky dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 10 minutes until smooth. Place in a greased bowl, cover, and let rise for 1 hour.

Prepare for Baking
Preheat the oven to 425°F (220°C). After rising, punch down the dough and spread it onto a greased baking sheet. Dimple the surface with your fingers.

Add Toppings
Drizzle with olive oil and sprinkle coarse sea salt over the top. Let it rise for another 20 minutes.

Bake in the preheated oven for 20-25 minutes or until golden brown. Let cool before cutting into cubes.

Prepare the Vegetables
In a large bowl, combine chopped tomatoes, diced cucumber, sliced red onion, and torn basil leaves.

Add the cubed day-old focaccia to the bowl with the vegetables.

Sprinkle with salt and freshly ground black pepper. Toss gently to combine.
