Bisque Base

Method

Bisque Preparation

  1. 1

    Sauté the Aromatics

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for another 1-2 minutes until fragrant.

  2. 2

    Cook the Corn

Add the corn kernels to the pot and stir for about 3 minutes. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 15 minutes.

  3. 3

    Blend the Bisque

Using an immersion blender, blend the soup until smooth. Stir in the heavy cream, salt, and black pepper. Let it warm on low heat for another 5 minutes before serving.

Crab Topping Preparation

  1. 4

    Prepare the Crab

In a small bowl, combine the jumbo lump crab meat, lemon juice, and chopped chives. Gently mix to ensure the crab meat is coated.

Spicy Tomato Oil Preparation

  1. 5

    Make the Spicy Oil

In a small saucepan, heat the olive oil over medium heat. Add the halved cherry tomatoes, red pepper flakes, minced garlic, and salt. Cook for about 10 minutes until the tomatoes are soft and the oil is infused with flavor. Remove from heat and let it cool slightly.
