Preparation of Base

    Heat the Milk and Cream

    In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is hot but not boiling.

    Mix Sugar and Egg Yolks

    In a separate bowl, whisk together the granulated sugar and egg yolks until the mixture is pale and slightly thickened.

    Combine Mixtures

    Gradually pour the hot milk and cream mixture into the egg yolk mixture, whisking continuously to temper the eggs.

    Cook the Mixture

    Return the combined mixture to the saucepan and cook over low heat, stirring constantly until it thickens slightly and coats the back of a spoon (about 5-7 minutes).

    Add Flavorings

    Remove from heat and stir in the vanilla extract. Allow the mixture to cool to room temperature.

Chilling and Churning

    Chill the Base

    Cover the mixture and refrigerate for at least 4 hours or overnight to chill completely.

    Prepare Ice Cream Maker

    Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.

    If you want to add flavor variations, mix in fresh fruits, cocoa powder, or Nutella during the last few minutes of churning.

Freezing

    Transfer to Container

    Once churned, transfer the gelato to an airtight container.

    Freeze for at least 2 hours to firm up before serving.
