For the Crispy Artichokes

    Prepare the Artichokes

    Trim the artichokes by removing the tough outer leaves and cutting off the top third. Cut the artichokes in half and remove the choke with a spoon. Soak the prepared artichokes in a bowl of water with lemon juice to prevent browning.

    Prepare the Breading Stations

    Set up three bowls: one with flour mixed with salt and black pepper, one with beaten eggs, and one with breadcrumbs.

    Bread the Artichokes

    Remove the artichokes from the lemon water and pat dry. Dredge each half in the flour mixture, dip in the beaten eggs, and finally coat with breadcrumbs. Ensure they are well coated.

    Fry the Artichokes

    In a large pot, heat vegetable oil over medium-high heat. Once the oil is hot, carefully add the breaded artichokes, a few at a time. Fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

For the Lemon Mayo

    Combine Ingredients

    In a small bowl, mix together mayonnaise, lemon juice, lemon zest, and minced garlic until smooth. Adjust seasoning with salt if necessary.

For the Juniper & Rosemary Salt

    Mix the Salt

    In a small bowl, combine sea salt, crushed juniper berries, and crushed rosemary. Mix well and set aside for seasoning.
