    Start by washing the white peaches thoroughly. Cut them in half, remove the pits, and peel off the skins. Chop the peaches into small pieces.

    Place the chopped peaches in a blender or food processor. Add the granulated sugar. Blend until smooth, creating a peach puree. If needed, strain the puree through a fine sieve to remove any fibers.

    In a champagne flute or a glass of your choice, add about 2 tablespoons of the peach puree at the bottom.

    Slowly pour the chilled prosecco over the peach puree, filling the glass to your desired level. Allow the bubbles to settle before adding more prosecco, if necessary.

    Gently stir the mixture to combine the puree with the prosecco without losing too much carbonation. Serve immediately with a slice of peach on the rim for garnish, if desired.
