    Cook the Pasta

    Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

    Prepare the Sauce

    While the pasta is cooking, slice the guanciale into small strips. Peel and thinly slice the local candy onions.

    Cook the Guanciale

    In a large skillet, heat the olive oil over medium heat. Add the guanciale and cook until crispy, about 5-7 minutes. Remove excess fat if desired.

    Sauté the Onions

    Add the sliced candy onions to the skillet with the guanciale. Sauté until the onions are translucent and soft, about 3-4 minutes.

    Make the Sauce

    Add the canned whole tomatoes (crushed by hand or with a spoon), red pepper flakes, salt, and black pepper to the skillet. Simmer for about 10-15 minutes, allowing the flavors to meld.

Final Assembly

    Combine Pasta and Sauce

    Once the sauce has thickened, add the drained spaghetti to the skillet. Toss to combine, adding reserved pasta water as needed to achieve desired consistency.

    Serve with Mozzarella

    Plate the pasta and top with diced mozzarella. Optionally, sprinkle additional black pepper over the top before serving.
