Cook the Chicken
In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the chicken thighs and season them with salt and black pepper. Cook until browned on both sides, about 5-7 minutes. Remove chicken from the pot and set aside.

Sauté Vegetables
In the same pot, add another tablespoon of olive oil and sauté the sliced onion and minced garlic until softened and fragrant, about 3-4 minutes.

Add Tomatoes and Chipotle
Stir in the diced tomatoes and chopped chipotle peppers. Cook for about 5 minutes until the tomatoes break down.

Simmer
Return the chicken to the pot, add the chicken broth and oregano. Bring to a simmer, cover, and cook for about 20-25 minutes or until the chicken is tender and fully cooked.

Serve the tinga hot with tortillas, avocado, or your choice of toppings.
