Melt Chocolate and Butter
In a heatproof bowl, combine the 70% Valrhona dark chocolate and unsalted butter. Place the bowl over a saucepan of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let cool slightly.

Whisk Sugar and Eggs
In a separate mixing bowl, whisk together the granulated sugar and large eggs until the mixture becomes light and fluffy. This should take about 3-5 minutes using an electric mixer.

Sift Dry Ingredients
In another bowl, sift together the all-purpose flour, baking powder, and salt.

Incorporate Dry Ingredients
Gently fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix.

Prepare Baking Pan
Preheat your oven to 180°C (350°F). Grease and line an 8-inch round cake pan with parchment paper.

Bake the Cake
Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Once baked, remove the cake from the oven and allow it to cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.
