1. Prepare the Steak
Season the flank or skirt steak with salt and black pepper on both sides. Heat olive oil in a grill pan over medium-high heat.
2. Grill the Steak
Add the steak to the grill pan and cook for about 4-5 minutes per side, or until it reaches your desired level of doneness. Remove from heat and let it rest for 5 minutes.
3. Slice the Steak
Once rested, slice the steak thinly against the grain.
4. Assemble the Burrito
Lay a flour tortilla flat, and place a portion of the sliced steak in the center. Top with shredded jack cheese, a generous spoonful of Hatch Green Chile Sauce, and a sprinkle of cilantro.
5. Roll the Burrito
Fold the sides of the tortilla over the filling, then roll it up from the bottom to the top to enclose the filling completely.
