1. Prepare the Filling

In a mixing bowl, combine the shredded roasted chicken, shredded cheese, chopped cilantro, and drained green chiles. Mix well until all ingredients are evenly distributed.

2. Assemble the Chuychanga

Lay a flour tortilla flat on a clean surface. Place about 1/2 cup of the chicken filling in the center of the tortilla. Fold in the sides and then roll it up tightly from the bottom to the top. Repeat with the remaining tortillas and filling.

3. Heat the Oil

In a deep frying pan, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

4. Fry the Chuychangas

Carefully add the assembled chuychangas to the hot oil, a few at a time, ensuring not to overcrowd the pan. Fry for about 3-4 minutes on each side or until golden brown and crispy. Use a slotted spoon to remove them and place them on paper towels to drain excess oil.

5. Serve

Serve the chuychangas hot with a scoop of sour cream and your choice of signature sauce on the side.
