Preparation
Prepare the Filling
In a mixing bowl, combine the shredded roasted chicken and shredded cheese. Mix well to ensure the cheese is evenly distributed.
Assemble the Flautas
Heat the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until warm and pliable. Place 2 tablespoons of the chicken and cheese mixture in the center of each tortilla. Roll them tightly and secure with a toothpick if necessary.
Fry the Flautas
In a large skillet, heat the cooking oil over medium-high heat. Once the oil is hot, carefully place the rolled flautas seam-side down in the skillet. Fry until golden brown and crispy, about 2-3 minutes on each side. Remove from oil and drain on paper towels.
Serve
Serve hot with guacamole, sour cream, and additional toppings like Queso or Boom-Boom sauce on the side.
