    Prepare the Seafood

    Preheat your oven to 400°F (200°C). In a large bowl, combine shrimp and scallops. Mince the garlic and add it to the seafood mixture. Squeeze the juice of 1 lemon over the seafood, then drizzle with 2 tablespoons of olive oil. Season with salt and black pepper, and toss to combine.

    Prepare the Vegetables

    Shuck the corn and cut the potatoes into quarters. In a separate bowl, toss the corn and potatoes with remaining olive oil, salt, and black pepper.

    Assemble the Brown Bags

    Open the brown paper bags and layer the seafood mixture, corn, and potatoes evenly in each bag. Add a slice of lemon and a sprig of parsley to each bag. Drizzle with melted butter.

    Seal and Bake

    Fold the top of each bag over to seal. Place the bags on a baking sheet and bake in the preheated oven for 20-25 minutes, or until the seafood is cooked through and the vegetables are tender.

    Serve

    Carefully open the bags, serve the seafood and vegetables immediately, garnished with fresh parsley and lemon wedges.
