Assemble
Place one small flour tortilla on a clean work surface. Evenly sprinkle half the cheddar (about 1/4 cup) and half the Monterey Jack (about 2 tablespoons) over the tortilla, leaving a 1/2-inch border. If using shredded chicken, distribute 2 tablespoons (about 0.25 cup total) of warm shredded chicken evenly over the cheese. Spoon 1 teaspoon of mild pico de gallo or chopped tomato over the filling. Top with the second tortilla and press gently to seal.

Heat a nonstick skillet over medium-low heat. Add the unsalted butter and let it melt and foam, swirling to coat the pan. Carefully transfer the assembled quesadilla to the skillet. Cook 2–3 minutes until the bottom tortilla is golden brown and the cheese begins to melt. Using a spatula, flip the quesadilla and cook another 1.5–2 minutes until the second side is golden and the cheese is fully melted. Reduce heat slightly if the tortilla browns too quickly before the cheese melts.
