Pineapple Juice

Pineapple Juice

    Prepare pineapple

    Trim the top and base of the pineapple, then stand it upright and slice off the skin. Quarter the pineapple, remove the core from each quarter, and cut the flesh into chunks. You should end up with about 3 to 3 1/2 cups of pineapple chunks from one medium pineapple.

    Place the pineapple chunks into a blender with 1 cup cold water, 1 tablespoon simple syrup or honey, and 1 teaspoon fresh lime juice. Blend on high until completely smooth (about 45–60 seconds).

    Taste and adjust sweetness: add more syrup or honey if needed (start by adding another 1/2 tbs). If the juice is too thick, add up to 1/2 cup more cold water and blend briefly to reach desired consistency.

    If you prefer a clearer juice, strain the blended mixture through a fine-mesh sieve or nut milk bag into a pitcher, pressing with a spoon to extract as much liquid as possible. Otherwise, serve unstrained for a pulpy texture.

    Stir in ice cubes into the pitcher or pour the juice over ice in individual glasses. Garnish with mint leaves if desired and serve immediately.

Strawberry Juice

    Prepare strawberries

    Rinse the strawberries well, hull (remove green caps), and halve larger berries so pieces are uniform. You should have about 2 cups packed.

    Add the strawberries to a blender with 1 cup cold water, 1 teaspoon lemon juice, and 1 tablespoon simple syrup or agave. Blend on high until smooth (about 30–45 seconds).

    Taste and adjust: add more sweetener or a splash more lemon if needed. If the mixture is too thick, add up to 1/2 cup additional water and blend briefly.

    Optional: strain the puree through a fine-mesh sieve to remove seeds for a smoother juice. Use a spoon to press the pulp to extract the juice. If you prefer a pulpy beverage, skip straining.

    Fill glasses with ice, pour the juice over the ice, garnish with basil or mint if desired, and serve chilled.

Mango Juice

    Prepare mango

    Peel the mangoes, slice the flesh away from the pit, and dice into chunks. You should end up with about 2 cups of mango flesh (roughly 1–2 medium mangoes depending on size).

    Place mango chunks into a blender with 1 cup cold water or coconut water, 1 tablespoon honey or simple syrup, 1 teaspoon fresh lime juice, and a 1/4 tsp pinch of salt if using. Blend until completely smooth (about 45–60 seconds).

    Adjust sweetness and thickness: add more sweetener or up to 1/2 cup additional water if you want a thinner juice. Blend briefly to combine.

    Strain if you want a silkier texture: push the puree through a fine mesh sieve with a spatula. Otherwise, keep it unstrained for a thicker, shake-like juice.
