    Make masa dough

    In a medium bowl combine masa harina and salt. Gradually add warm water, mixing with your hand or a spoon until dough comes together and feels moist but not sticky. If too dry, add up to 2 tbs more water; if too sticky, add a teaspoon masa at a time. Let rest, covered, for 10 minutes.

    Form patties

    Divide dough into 6 equal portions (about 3-3.5 oz each). Roll into balls and flatten between two pieces of plastic wrap or in a tortilla press to about 1/4 inch (6 mm) thickness and 4-5 inch diameter. Smooth edges with wet fingers if needed.

    Par-griddle (optional step for crispier interior)

    Heat a dry cast-iron or nonstick griddle over medium-high. Cook each flattened masa for about 30–45 seconds per side until the surface firms and light brown spots appear. This step helps set the dough; you can skip and fry directly, but par-griddling reduces oil absorption.

    Fry to crispy

    Pour vegetable oil into a wide skillet or Dutch oven to a depth of about 1/4 inch (or 1 cup for a 10" pan). Heat oil over medium-high until shimmering and a small bit of masa sizzles immediately (about 350°F/175°C). Fry each par-griddled or raw tortilla 45–75 seconds per side, pressing gently with a spatula so steam puffs the interior slightly. Fry until golden-brown and crisp but still pliable enough to open. Transfer to a paper towel-lined rack to drain. Keep warm in a low oven (200°F/95°C) while finishing others.

    Prepare meat

    Pat your chosen meat dry and slice thinly if not already sliced. Place in a bowl and toss with olive oil, ground cumin, chili powder, garlic powder, salt, black pepper, and lime juice if using. Let marinate briefly while you finish preparing gordita bases (10–15 minutes) or up to 1 hour refrigerated.

    Cook meat

    Heat a large skillet or griddle over medium-high heat. Add 1 tbs olive oil if pan is dry. Add the seasoned meat in a single layer (work in batches to avoid crowding). Cook chicken 4–6 minutes, turning until cooked through; cook beef or pork 3–6 minutes depending on thickness until browned and cooked to desired doneness. Break up or slice meat as it cooks so pieces are bite-sized. Taste and adjust seasoning.

Assembly & Toppings

    Prepare toppings: shred lettuce, crumble queso fresco, shred mozzarella, and have sour cream ready in a small bowl. Warm the cooked meat briefly in the skillet if needed.

    Open each crispy gordita: using a small paring knife, carefully cut a horizontal pocket/opening in the side of each fried tortilla (like a pita), leaving about 1/2" intact so it holds fillings. If your gorditas are stiff, briefly warm them 10–15 seconds per side on a griddle to make them pliable before cutting.

    Assemble: spoon 3–4 tablespoons (about 1/4 cup) of cooked meat into each gordita pocket. Add about 2–3 tablespoons shredded lettuce, 1 tablespoon sour cream (or to taste), 2 tablespoons shredded mozzarella, and 1 tablespoon crumbled queso fresco. Add pickled jalapeños and cilantro if using. Serve with lime wedges on the side.

    Serving suggestion: serve hot so cheeses melt slightly from the warm meat. Provide extra sour cream, queso fresco, and salsa/shawarma-style hot sauce at the table.
