    Crisp the tortillas

    Heat a heavy skillet over medium-high heat and add 1 tablespoon vegetable oil. When oil shimmers, add one tortilla and fry 20–30 seconds per side until golden and crisp but still pliable (for extra crispness fry 45–60 seconds per side). Transfer to a paper-towel-lined plate. Repeat with remaining tortillas, adding a little more oil if needed.

    Keep tortillas warm in a low oven (175°C / 350°F) on a baking sheet while you assemble quesadillas.

    Note: If you prefer to avoid frying, brush each tortilla lightly with oil and bake at 200°C / 400°F on a sheet for 6–8 minutes, flipping once, until crisp.

    Assemble quesadillas

    Lay one crisped tortilla on a work surface. Sprinkle 1/4 cup shredded mozzarella evenly over half the tortilla, leaving a small margin. Top mozzarella with 1/4 cup of your chosen prepared meat, spreading it to cover the cheese area. Crumble about 1 tablespoon queso fresco over the meat. Fold the tortilla in half to enclose filling. Repeat to make 4 quesadillas (use two tortillas per large double-stack if you prefer thicker).

    When assembling, ensure mozzarella is directly on the tortilla so it melts and acts as a glue. Queso fresco is added after mozzarella to provide bright, crumbly texture; it does not fully melt.

    If assembled quesadillas need additional melting, return folded quesadillas to a clean skillet set over medium heat and toast 1–2 minutes per side until mozzarella is melted and exterior is golden and crisp.

Choice of meat (pick one)

    Prepare meat (if not already cooked)

    Chicken: Shred 1 cup cooked chicken and warm in a small skillet with 1–2 tablespoons salsa or 1/4 tsp salt and 1/8 tsp pepper for 2–3 minutes. Ground beef: Cook 1/2 lb ground beef in a skillet over medium heat until browned, drain, then stir in 1/2 tsp chili powder, 1/4 tsp cumin, 1/4 tsp salt and cook 1–2 minutes. Pork (carnitas): Warm 1 cup shredded pork in a skillet with 1–2 tablespoons of its cooking juices or a splash of water until heated through. Season lightly with salt and pepper. Measure 1 cup of the warmed meat for the quesadillas.

    Taste the meat and adjust salt/pepper as needed before assembling.

Seasoning & garnish

    After toasting, slice each folded quesadilla in half or into wedges. Sprinkle with remaining queso fresco and chopped cilantro (if using). Add a pinch of salt and black pepper to the shredded lettuce if desired.

    Serve each quesadilla topped with a spoonful of sour cream and a wedge of lime on the side to squeeze over before eating.
