Halve lemons and smash 4 garlic cloves lightly; mince the remaining 4 garlic cloves for the butter finish.

Cut andouille sausage into 2-inch pieces and set all ingredients near the pot for a staged addition.

Bring the liquid to a boil
In a very large stockpot (at least 8-12 quarts) or dedicated seafood pot, combine 6 qts water and 1 qt beer (if using). Add Old Bay seasoning, kosher salt, whole peppercorns, bay leaves, smashed garlic cloves, and the halved lemons (squeeze half the juice into the pot and toss the halves in). Bring to a vigorous boil over high heat.

Taste the broth (carefully) after it boils for 5 minutes and adjust salt or Old Bay if necessary. The broth should be boldly seasoned — it seasons the seafood.

Add crab and shrimp
Add the crab clusters/legs to the pot and simmer 4 minutes. Then add the shrimp and simmer 3–4 minutes more, or until shrimp are pink and opaque and crab is heated through. Do not overcook—shrimp cook quickly.

If cooking very large lump crab or live hard-shelled crab longer time may be required; adjust times so all proteins are just done.

Make garlic butter
While draining, melt 1 cup unsalted butter in a small saucepan over low heat. Add the minced garlic and cook gently 1–2 minutes until fragrant (do not brown). Stir in fresh lemon juice and half the minced parsley. Remove from heat.

Serve family-style on butcher paper or a large platter. Provide crab crackers, small forks, napkins, and extra melted butter in ramekins. Leftovers keep 1–2 days in the refrigerator; reheat gently in a covered pan with a splash of water or broth and additional butter.
