    Preparing the Fries

    1. Peel the potatoes and cut them into thin strips. Soak in cold water for 30 minutes to remove excess starch. Drain and pat dry. Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Drain on paper towels and season with salt.

    Cooking the Steak

    2. Season the steaks with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Add the steaks and cook for about 4-5 minutes per side for medium-rare, or longer if desired. Remove from heat and let rest for a few minutes.

    Making the Béarnaise Sauce

    3. In a saucepan, melt butter and sauté shallots until soft. Add white wine vinegar and reduce by half. In a bowl, whisk together egg yolks and reduce mixture. Gradually add melted butter while whisking until thickened. Stir in tarragon and heavy cream, then season with salt and pepper.

    Preparing the Sauce Au Poivre (optional)

    4. For the sauce au poivre, in the same skillet used for the steak, add beef broth and black peppercorns. Simmer until reduced by half, then strain and serve alongside the steak.

    5. Serve the steak with a generous amount of béarnaise sauce on top and a side of crispy fries.
