    Make Chickpea Fries

    In a saucepan, bring water and 2 tablespoons of olive oil to a boil. Gradually whisk in chickpea flour, cumin, paprika, and salt until smooth. Cook for about 5 minutes until thickened. Pour into a greased baking dish and spread evenly. Let it cool for 30 minutes, then cut into fries.

    Fry the Chickpea Fries

    Heat oil in a frying pan over medium heat. Fry the chickpea fries until golden and crispy on all sides, about 3-4 minutes per side. Drain on paper towels.

    Spice Up the Chickpeas

    Toss cooked chickpeas with olive oil, salt, garlic powder, and black pepper. Spread on a baking sheet and roast in a preheated oven at 400°F (200°C) for 20 minutes, or until crispy.

    Prepare the Hummus

    In a food processor, blend the remaining cooked chickpeas, tahini, lemon juice, garlic, and salt until smooth. Add water as needed for desired consistency.

    Assemble the Dish

    Serve the crispy chickpea fries with hummus on the side, topped with chopped black olives and drizzled with harissa paste.
