    In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 25-30 minutes.

    Add Broth and Seasonings

    Stir in the beef broth, white wine, thyme, and bay leaves. Bring the mixture to a boil, then reduce the heat and let it simmer uncovered for about 30 minutes. Season with salt and black pepper to taste.

    Prepare the Croutons

    While the soup is simmering, preheat your oven to 350°F (175°C). Slice the baguette into 1-inch thick slices, place them on a baking sheet, and toast in the oven until golden brown, about 10 minutes.

    Remove the bay leaves from the soup. Ladle the soup into oven-safe bowls, top with toasted baguette slices, and sprinkle Gruyère cheese generously over the top.
